Heck, no-one here is going to judge you for using instant pancake mix, but for the mornings (or nights) when you want to revel in your inner domestic Goddess, here's a yummy pancake recipe that's almost as easy as instant.

Directions:

Place the dry ingredients into a medium-size bowl and whisk until combined.

Place the wet ingredients into a large bowl and beat until well blended. Add the flour mixture to the egg mixture and stir everything together only until just blended. There will be bumps, don’t freak out! This is normal and it’s totally cool.

Heat a large skillet or over medium heat and add a tiny bit of cooking oil until the bottom of the pan is covered.
add the batter by ¼ cups.

Cook the pancakes until you see bubbles forming on the top and the edges start too look cooked, about 2 minutes. Flip with a spatula and cook for another 1-2 minutes, until golden brown.

Tip: If you want to get extra fancy, once you pour ¼cup of the batter in the pan, top your pancakes with blueberries or chocolate chips.
