B-A-N-A-N-A-S! (and chocolate chip, duh.)
- 4 gross ripe bananas (The ones your kids keep sending back home from school work great!)
- 1/3 cup melted butter cooled
- 2/3 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- A pinch of salt
- 1 1/2 cups all purpose flour
- 1 cup milk chocolate chips
1. Preheat oven to 350.
2. Grease your muffin tins
3. Peel bananas and throw them in a big bowl with the melted butter and smash it all together with a fork.
4. Keep blending until the mixture is creamy and smooth, not chunky.
5. Add sugar, egg and vanilla and mix just until combined.
6. Stir in salt and baking soda.
7. Add flour and chocolate chips and mix until just combined. Do not over-mix!
8. Divide into muffin cups, ¾ full.
9. Bake until cake tester or toothpick pulls out with a few crumbs on it for about 15-20 minutes
