SUPER easy, not-so-basic Cavaletti

Tomato- Basil Cavaletti Skillet



  • 1 box of dried cavelletti, rotini, or gemelli pasta
  • 1 (28oz)can of whole peeled tomatoes, cut up
  • 1 cup chicken broth
  • Three cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup fresh basil leaves, coarsely chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper
  • 8 slices of fresh mozzarella or 2cup shredded mozzarella cheese.


In a deep large skillet layer the first 10 ingredients in the order listed. Do not stir. Bring to boil over medium high heat; reduce heat. Simmer, covered, for 20 minutes or until pasta is tender, stirring occasionally. Top with cheese. Cover and let stand for 10 minutes before serving, sprinkle with additional basil.
